Will the backup camera (any camera upfront?) have a g-shock sensor. So, if it's parked and someone hits it will the camera start recording? If not, how would I add one?

The factory backup camera system does not have recording capabilities.

There are a host of dash camera system available that provide front and back cameras to provide the type of protection you are asking about.

They tend to attach via either suction windshield mount or adhesive. Routing the cables can be a bit tricky, but not impossible.

If you have to park outside often, and live in a particularly sunny area, though, you may have to replace it after a few years; the battery in my Anker webcam swelled to the point it won't work anymore and actually broke the housing.
